According to recent research we cannot meet the goal of limiting warming to 1.5° without significant change in our food systems, with special emphasis on moving to plant-based diets. The worlds 9000+ vegan restaurants have an outsized role to play in this transition by enabling people to see that the change will not be boring. Our own restaurant -el buda profano- is, I think, a stellar example. We regularly receive reviews on sites such as TripAdvisor from people who are "not close be being vegan" raving about the food and about the experience. Locally, we have inspired other entrepreneurs to open additional concepts in plant-based dining. Before we opened, there were zero vegan restaurants in town, now there are four. This is still too few, as most people go out to eat on a regular basis and we are outnumbered on a grand scale. To reach the goal of most meals being plant-based most of the time, the default choice needs to be 100% plant-based. Most restaurants will need to be vegan. Our goal is to both be part of that change by scaling our restaurant to multiple locations throughout the Americas and to inspire others to same. Current restaurants will either change or be replaced in the market.
